Ingredients:
2 pounds Granny Smith Apples
1 tablespoon Lemon zest
1 tablespoon lemon juice
1/4 cup sugar
1/8 cup all purpose flour
1 teaspoon salt
1/2 teaspoon cinnamon (+ 1/2 teaspoon)
1/4 teaspoon nutmeg
pinch of allspice
2 tablespoons butter
Puff Pasty
1/4 cup light brown sugar
1 egg
1 tablespoon water
- Preheat the oven to 400 degrees. Peel and dice apples and place in a bowl. Add the next 8 ingredients to the bowl and stir until combined. Melt butter in a skillet on medium heat. Once melted add apple mixture and cook down until apples are tender, 10 minutes.
- Prepare your puff pastry by laying it out on a floured surface. I like to use my rolling pin to make the pastry a little longer and wider. Then I cut 3 inch stripes around the edges of the puff pastry leaving enough room to put your apple mix in the middle. See image below.

3. After allowing the apples to cool place the apple mixture in the middle of the prepared puff pastry. Then take each strip and lay it over the apple mixture so that some stripes are overlapping each other. See pictures above.
4. Whish the egg with a tablespoon of water. Brush the top of the strudel with the egg wash. Combine the remaining 1/2 teaspoon of cinnamon with the 1/4 cup of brown sugar. Sprinkle the cinnamon mixture on the pasty then bake for 15 to 20 minutes or until light brown.
